Buttermilk Soup

Ayran Soup takes its place at the corner of Ramadan and iftar tables for 30 days. It is cooked outside of Ramadan months. This soup, which is called yogurt soup in other regions, is called ayran soup in Erzurum. A scoop of gendime (ashlık) is cooked thoroughly. Yoghurt (it is called urva) prepared in another bowl and a little flour is added into it is mixed with gendime and put on the fire. Stir until it boils. On the other side, the prepared meatballs are added into it. Try ash grass and a very nice herb such as parsley grown in Erzurum is added. A head of onion is chopped in a pan. It is fried in butter until it turns pink (this is called sohariç). It is poured over the soup and served hot. If Ayran Soup is made from buttermilk like it is made with yoghurt, you will not be satisfied with its taste.
